Lady Settledown’s Royal Lamb Dinner

Lady Settledown’s Royal Lamb Dinner is a simple Weber recipe perfect for caravan cooking, pairing marinated lamb cutlets with parmesan potatoes and mint peas.

Ingredients for Lady Settledown’s Caravan Royal Lamb Dinner

  • 8 lamb cutlets
  • 3 normal sized potatoes
  • 3/4 cup Parmesan cheese
  • 1 tab garlic butter – melted
  • 1 1/2 cups frozen peas
  • 2 tab pesto dip
  • Mint sauce (for the peas)

Lamb Marinade

  • 1 tab honey
  • 3 tab olive oil
  • 1 tsp rosemary
  • 1 tsp garlic – fresh or dried
  • 1 tsp mustard

Preparing the Marinade

Mix the marinade ingredients and bathe the lamb chops in the mixture an hour or so before cooking. Let them sit in the fridge but take them out 15 minutes before cooking time.

Parmesan Potato Bake in the Weber for Caravan Cooking

Melt the butter and mix with the Parmesan cheese. Spread this mixture evenly on the bottom of a foil tray.
Slice the potato into 1/2 inch thick rounds and place on top of the cheese mix.
Season with salt and pepper and cover with foil.
Place on the trivet in the Weber and cook for 30 minutes.

Peas with Mint Sauce Beside the BBQ

Make a foil parcel that will contain the peas and place it on the trivet next to the potatoes.
Cook for another 15 minutes until the peas are tender.
Remove, recover with foil, and set aside until serving.

Cooking the Lamb Chops

Turn the Weber up to high and cook the lamb chops to your liking. Remove to a plate, cover with foil, and rest for a few minutes. Kiss the top of each chop with pesto before serving.

Serving Lady Settledown’s Caravan Royal Lamb Dinner

Arrange the lamb chops on a plate. Peel the cheesy potatoes off the bottom of the foil tray and place them alongside the peas sprinkled with mint sauce. A caravan dinner fit for royalty.
