BUSH COOKING: Trackside Nachos
Jamie cooks up one of his favourite trackside feeds – Nachos!
Ingredients (Serves 4)
- 500g Mince
- 1 Onion
- 1 Pack of Nachos Spice Mix
- 1 Tin Diced Tomatoes
- 1 Tin 4 Bean Mix
- 1 Tin Refried Beans
- 1 Bag Corn Chips
- Cheese
- Sour Cream
- Guacamole or Avocado Dip
Method
- Dice the onion finely and brown it in a skillet.
- Add the mince to the skillet and brown it with the onion.
- Once browned, add the diced tomatoes, refried beans, and drained 4-bean mix to the skillet.
- While the mixture simmers, spread the corn chips evenly on an oven tray and warm them in a camp oven or hooded BBQ.
- Once the chips are hot, pour the mince mixture over them, ensuring even coverage.
- Sprinkle grated cheese over the top and return the tray to the oven.
- When the cheese is melted and browned, remove the tray, top with sour cream and guacamole, and enjoy!
